Every quotation on this site comes from one of these documents. We read them ourselves, and each quotation is checked against the saved text on every build.

How we use them
We quote a document when it says something we cannot say ourselves: what a food-safety agency says about temperature, what a regulator says about a material, what a public-health body says about water. We do not paraphrase a source and attribute the paraphrase to it.
Where we have no source and no measurement of our own, we say so on the page rather than filling the gap with something that sounds right. Nothing on this site is medical advice.
